From 15 October to 15 November, the Wine Days at Hacienda Zorita Wine Hotel invite guests to discover the wines of Salamanca and its surrounding wine regions through an experience that brings together local wineries, seasonal gastronomy and the flavours of autumn.

Autumn transforms the landscape and the dining table alike. It is the season of wild mushrooms, game, rich flavours and ingredients that tell the story of the land and the people who work it. At Hacienda Zorita Wine Hotel, we celebrate this special time of year with a culinary experience that showcases the richness of our local gastronomy and wine heritage: the Wine Days at Zorita’s Kitchen.

From 15 October to 15 November, our hotel welcomes five wineries from Salamanca and its surrounding wine regions for a unique experience connecting the origins of each wine with seasonal cuisine. It is an invitation to explore the region through its producers, discover distinctive wines and enjoy a specially designed food-pairing menu.

Five Wineries, Five Stories to Discover

Wine is much more than what is poured into a glass. It reflects the landscape, tradition, knowledge and dedication of the people behind it. That is why these Wine Days offer something more than a tasting: each participating winery is represented by someone closely involved in its story and winemaking process, who shares the origins of its wines, the character of the project and the passion behind every bottle.

Over five weeks, the programme brings together Dominio de Gallo, Cambrico, Q-Mil, TOTEM and ALMA ROJA, showcasing different wine-growing areas, grape varieties and winemaking styles. Each winery offers a fresh perspective on the diversity and identity of the region’s wine culture.

More than a tasting experience, it is an opportunity to hear the stories that begin in the vineyards, understand what makes each wine unique and enjoy a personal connection with the people who produce it.

A Taste of Autumn at Zorita’s Kitchen

At Zorita’s Kitchen, the experience continues at the table. Our culinary team has created a food-pairing menu inspired by the ingredients and flavours of the season, with wild mushrooms, game and locally sourced produce taking centre stage.

The menu begins with boletus mushroom cream accompanied by marinated quail, apple and hazelnut. The journey continues with dishes that combine seasonal ingredients and contrasting flavours, including langoustine with oyster mushrooms, citrus and fennel; wild red partridge with fairy-ring mushrooms, walnut cream and its own jus; and wild boar carré with black trumpet mushrooms, celeriac and blueberries.

The experience concludes on a sweet note with a chestnut coulant and sweet potato sauce, capturing the warmth and aromas of autumn.

Each dish has been thoughtfully created to complement the wines, allowing the flavours of the kitchen and the character of each glass to enhance one another. The result is a seasonal dining experience rooted in the region and designed to celebrate the connection between wine, food and place.
